Roasted Jerusalem Artichokes with Garlic, Thyme and Lemon

Ingredients

  • 1.5 lbs Jerusalem artichokes (also called sunchokes), scrubbed clean

  • 3 tablespoons olive oil

  • 4 garlic cloves, smashed

  • 1 tablespoon fresh thyme leaves (or 1 tsp dried)

  • Zest of 1 lemon

  • 1 tablespoon lemon juice

  • Salt and freshly ground black pepper, to taste

  • Optional: chopped fresh parsley or chives, for garnish

Directions

  1. Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.

  2. Slice the Jerusalem artichokes into 1/2-inch thick rounds (or halve if small).

  3. In a large bowl, toss them with olive oil, smashed garlic, thyme, salt, and pepper.

  4. Spread the artichokes in a single layer on the prepared baking tray.

  5. Roast for 25–30 minutes, flipping halfway through, until golden and tender.

  6. Remove from oven, drizzle with lemon juice and sprinkle lemon zest over the top.

  7. Garnish with fresh herbs if desired, and serve warm as a side or light appetiser.
