Sweet and Tangy Braised Red Cabbage

Ingredients

  • 1 medium head red cabbage, thinly sliced (about 6 cups)

  • 2 tbsp olive oil or butter

  • 1 medium red onion, thinly sliced

  • 1 green apple, cored and sliced (optional, for sweetness)

  • 1/4 cup apple cider vinegar

  • 2 tbsp brown sugar (or maple syrup for a natural option)

  • 1/2 cup vegetable stock or water

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/4 tsp ground cloves or allspice (optional, for warmth)

  • 1 bay leaf (optional)

Directions

  1. Slice the red cabbage thinly. Remove the core and discard any tough outer leaves.

  2. Heat olive oil or butter in a large skillet or Dutch oven over medium heat. Add the red onion and sauté for 5 minutes, or until softened.

  3. Stir in the sliced red cabbage and apple (if using), cooking for another 5 minutes until slightly wilted.

  4. Pour in apple cider vinegar and sprinkle with brown sugar. Stir to coat the cabbage evenly.

  5. Add the vegetable stock, salt, pepper, ground cloves (if using), and bay leaf. Stir well, reduce the heat to low, and cover. Simmer for 30–40 minutes, stirring occasionally, until the cabbage is tender and the flavors meld together.
