Summer is the season for fresh flavours, quick meals, and dishes that don’t keep you stuck in a hot kitchen. This Summer Vegetable Orzo Salad checks every box. It’s light yet filling, colourful yet simple, and bursting with the best of what’s in season — zucchini, squash, tomatoes, and herbs — all tied together with a zesty lemon vinaigrette that brightens every bite.

Whether you’re headed to a barbecue, planning a week of meal prep, or just want a refreshing dinner, this salad makes summer cooking easy and joyful.

The beauty of this recipe is its flexibility. Add grilled chicken or chickpeas for protein, swap herbs based on what’s growing in your garden, or toss in extra veggies like corn or bell peppers.

Served chilled or at room temp, it’s the kind of dish that feels like sunshine on a plate — ideal for backyard lounging, beachside lunches, or breezy balcony dinners. It’s no-fuss, no-sweat cooking at its best — the way summer meals should be.

  3. Use aceite de oliva de alta calidad para su vinagreta.

  4. Agregue hierbas justo antes de servir para Max Freshness.

  8. Almacene el aderezo por separado si avanza.
