Spicy Chorizo Street Tacos with Fresh Coriander and Lime

Ingredients

  • 1 lb Mexican chorizo sausage (raw, casings removed)

  • 8 small corn tortillas

  • 1 small white onion, finely chopped

  • 1/2 cup fresh cilantro, chopped

  • 1/2 cup crumbled queso fresco or cotija cheese

  • 1 avocado, diced

  • 1/4 cup pickled red onions (optional)

  • 2 limes, cut into wedges

  • Salsa verde or your favourite hot sauce, for serving

  • Olive oil or cooking spray for warming tortillas

Directions

  1. Heat a skillet over medium heat. Add the chorizo and cook, breaking it apart with a spatula, for 7–10 minutes until fully cooked and browned. Remove from heat.

  2. While the chorizo is cooking, warm the corn tortillas in another skillet with a light brushing of olive oil or by heating them directly over a gas flame for 10–15 seconds per side. Keep warm in a tortilla warmer or under foil.

  3. Assemble tacos by dividing the chorizo evenly among the tortillas.

  4. Top each taco with chopped onion, fresh cilantro, diced avocado, and crumbled cheese.

  5. Garnish with pickled onions if using, and serve with lime wedges and salsa on the side.
